Due to the presence of double bonds, vegetable oils undergo addition reaction with hydrogen just like alkenes to form saturated compounds called vegetable ghee or vanaspati ghee which are solid or semi solid at room temperature. This process is called hydrogenation of oils.

Hydrogenation is the process of converting vegetable oil to vegetable ghee. During hydrogenation, vegetable oils are reacted with hydrogen gas at about 60°C. A nickel catalyst is used to speed up the reaction. The double bonds are converted to single bonds in the reaction. In this way, unsaturated fats can be made into saturated fats i.e. oil is converted into fats.
